Mexican Appetizers Recipe

Looking for a tasty appetizer that will blow your guests away? Try these incredible Taco Bites. The cheese binds together the toppings for an amazing treat that you won’t be able to stop eating. They taste similar to an enchilada, but you can eat them without a fork!

Ingredients:

1 Pound Ground Beef

1 Package of Taco Seasoning

6 Medium Whole Wheat Flour Taco Shells (Cut in 4 triangles)

1 Large Tomato (chopped)

Sliced Black Olives

Green Onions

1 Red Bell Pepper

Taco Bites RecipePreheat oven to 350 degrees. Lightly grease the inside of two cupcake sheets and set aside.

While the oven preheats, brown the beef. Drain excess fat, and then return the beef to the stove. Add 1 ¼  cups of water to the beef (which is about ¼ cup more than the seasoning package will direct, but you want a little extra liquid for when you stuff the tortillas). Cook mixture on low for 15 minutes.
Line the inside of each cupcake hole with ¼ of a tortilla (Fold the triangle tortilla so it forms a “cup.” It won’t perfectly cover the entire hole, but should be arranged so the toppings aren’t sitting directly on the bottom of the pan; some spacing on the sides is OK).

Place two scoops of beef in the tortilla cup, filling each cup about ¼ full. Next, layer the toppings: put a pinch of cheese on top of the meat, and then add a pinch of tomatoes, bell pepper, and olives. Spoon approximately 1 tablespoon of taco meat liquid over the toppings. Finally, cover the top of each cupcake with cheese, ensuring to add enough cheese to cover any areas exposed to the pan’s metal (you want the cheese to melt and harden down the sides to help form a “cup.”)

Once each cupcake is complete, place the pan in the oven for 15-25 minutes. Watch closely and cook until the cheese has hardened around the outside edges and the top is golden brown. Let cool for 10 minutes before serving.
