3 Simple and Healthy Dinner Ideas

Time is always of the essence, but this is especially the case in fall, with school and sports back on everyone’s schedule. That’s why we figured it would be helpful to share some simple and healthy dinner ideas, so you can spend less time in the kitchen on busy nights. These awesome meal ideas come from YouTube personality Nikki Phillippi. We think you’ll enjoy them!

Fish Taco Bar

To start, you grill up some salmon or cod, followed by cooking the tortillas in the remaining vegetable oil left in the pan.

Then, proceed to make the guacamole. Nikki’s guacamole ingredients consist of:

  • Avocado (cut in half and squeezed into a bowl)
  • Lime
  • Jalapenos
  • Cilantro
  • Red onions
  • Pepper & chunky sea salt

All of these ingredients are chopped up/diced and combined together in the bowl.  Mix it together thoroughly.

Grab some ramekins (or small bowls) and place desired individual taco ingredients in each bowl. In addition to the remaining lime, cilantro, and red onion, she places salsa and greek yogurt (in substitute for sour cream) in their own ramekin. This makes it very easy to combine all the ingredients for each taco.

Lemon & Pesto Potato Salad

Nikki begins this tasty potato salad recipe by gathering the ingredients for the sauce. Those ingredients include:

  • 3 tablespoons of olive oil
  • 1 tablespoon of basil pesto
  • 1/2 cup of vegenaise or mayonnaise
  • Juice of two lemons
  • Salt & Pepper

 

Begin boiling small/medium potatoes in a pot on the stove. While the potatoes are boiling, mix together the ingredients for the creamy sauce. She recommends to boil the potatoes for about seven minutes, running them under cool water after to stop them from cooking.

After letting them cool for a bit, chop up the potatoes into bite-sized pieces and combine them in a bowl with the sauce. Top the mixture with diced basil leaves and you’re all ready to eat!
